In the heart of Elche, among palm groves and clay vessels, Jaime Faelo runs a small family winery full of soul. Grapes are still harvested by hand – using his grandfather’s old pruning shears – and wines are fermented in terracotta amphorae or aged in oak, just as they were generations ago.
